Breakfast of Champions

Since going back to work 2 months ago, things have been much busier in the mornings around here!  I have to be out the door by 7:25, and I need to have eaten a good breakfast because there's no time for me to snack until I return home 3 hours later.  The rest of the family eats oatmeal most days, but I found that to be too time consuming, both to make and to eat.  So I do breakfast sandwiches - think McDonald's Egg McMuffins.  I make them a dozen at a time and then freeze them until I need them.

English muffins
Ham or Canadian bacon 

1. Crack the eggs into muffin tins and bake for about 10 minutes @ 325 degrees.
2. If using a whole ham, slice it.  Brown the ham or Canadian bacon in a fry pan over the stove for just a few minutes.
3.  Toast the english muffins
4.  Slice the cheese
5.  Assemble into sandwiches and wrap in foil.  Freeze.  

When it's time to reheat, the best method I have found is to place them in the fridge overnight to defrost and then toast them in a toaster over.  If you forget to defrost, wrap the sandwich in a paper towel and defrost in the microwave before toasting.  If you are really in a hurry, you can do just the microwave, but you might end up super soggy or super crunchy.  

This may not be much of a recipe, but I really do appreciate these sandwiches each morning!

    In a hurry. I microwave a slightly scrambled egg in a Pam sprayed cup for 1:15 on power level 4. Toast the light English
    Muffin them assemble with slice if cheese and ham.
