Ingredients:
English muffins
Eggs
Ham or Canadian bacon
Cheese
Directions:
1. Crack the eggs into muffin tins and bake for about 10 minutes @ 325 degrees.
2. If using a whole ham, slice it. Brown the ham or Canadian bacon in a fry pan over the stove for just a few minutes.
3. Toast the english muffins
4. Slice the cheese
5. Assemble into sandwiches and wrap in foil. Freeze.
When it's time to reheat, the best method I have found is to place them in the fridge overnight to defrost and then toast them in a toaster over. If you forget to defrost, wrap the sandwich in a paper towel and defrost in the microwave before toasting. If you are really in a hurry, you can do just the microwave, but you might end up super soggy or super crunchy.
This may not be much of a recipe, but I really do appreciate these sandwiches each morning!
