Meal Plan Monday: Cream Tuna on Toast

This weekend we didn't have much time for grocery shopping, so we meal planned with what we had on hand.  We still had to do a quick trip after church for the necessities (milk, bread, eggs, lunch meat, and carrots), but otherwise were able to plan this week's meals with what we had on hand.  We try to have at least one week like this per 4-6 week period because it helps to keep food costs down and clears out the cabinets!  So here is what this week looks like:

Monday: Lentil soup and bulgur salad
Tuesday: Cream Tuna on Toast
Wednesday: Black Beans & Rice
Thursday: Leftover black beans
Friday: Spaghetti with putanesca sauce

The recipe I am sharing this week is for Cream Tuna on Toast.  This is a recipe from my childhood.  It is really simple to make and the kids love it!  It's one of the few meals that I can make and be completely confident that my children will all eat!  This recipe can easily be doubled or tripled according to how much your kids eat.  As written below it is enough for approximately 4 slices of toast.

2 Tablespoons butter
2 Tablespoons flour (we like to use whole wheat)
1 cup milk (we use skim)
1 can (5 oz) tuna in water
Slices of bread, toasted

1. Melt butter in saucepan over medium heat
2. Stir in flour
3. Gradually add milk while stirring.  Over time the mixture will thicken.  Give it time and stir frequently!
4.  When it gets thick, add the tuna.  Heat through.
5.  Serve over toast
